Pear Honey


Found this tasty sounding recipe in my local news paper this morning by Food Columnist Patty Christopher.
Pear Honey
9 Pears
1 Orange
Sugar
Peel pears & run through your food processor. Quarter you orange and run it through the processor rind and all. Measure pulp (and here I assume of just the orange) and add an equal amount of sugar.Bring to a boil then boil gently for 7 minutes. Pay special attention not to scorch by stirring constantly. Can in sterilized jars. According to the author, this makes a honey consistency. If you would like a thicker concoction she suggests adding pectin or boiling longer. Would be yummy on biscuits or even over ice cream. I am trying this next week and will let you know how it turns out!
